The olives are now in their fourth day of the more concentrated brine. All in all, they've been in the mix for 12 days. Just 78 more to go!Sorry for the poor quality of the photo. Didn't have time to use the camera, so I used my cell phone. But you can se that some are still purple, some are green, and some are turning a nice shade of brown.

Please let us know how it goes! I have a dozen of olive trees in my backyard, and I've always wanted to try brining them myself.

Yum.... olives. I want to grow fruits & veggies, but all I got is a calamondin lemon tree.
